And this is how to start. You need:
-250g sourdough starter
-360g water lukewarm
-500g flour (I used a 1:1 mix of wholemeal and white flour)
-12g (sea)salt

First you need to mix your at that stage pretty stiff sourdough starter with the water and very gently break it up with your fingers. This will by the looks of it turn your mix into something like a cold soup.

Now you let it rest for 10mins (it needs to get used to each others company)
Next put some flour on your hands and start gently kneading by folding your dough over from the outside to the inside. Go right around your bowl and do this motion for about eight times until everything feels well combined. |
