Did you know that those lovely greens are not alone edible but are also highly nutritious? Apparently they contain 6 times the vitamin C of the root, they are loaded with potassium, calcium and vitamin K (which is lacking in the root itself and is vital to bone health). Not to forget the chlorophyll which gives it its lovely green color and is indeed very healthy...
I could go on with a whole list of ingredients naming proteins, minerals and so on with all their health benefits but I'm not going to bore anybody with this pack of information here. Just one word of caution: If you want to try the carrot greens rather pick the organic ones as I would imagine that otherwise they could be loaded with pesticides sprayed right on top of them.

It is one of the quickest things I
ever made. And not just that - it is
raw, vegan, for the ones with a nut
allergy it can be made nut-free... It
is also very healthy on the pocket as
you don't have to source tons of
basil and can swop the pine-nuts for
sunflower seeds.
Well, and simply, it is just very
tasty! One definitely to try out!
We have it ready here to spread it
on to our freshly baked bread, hmm.
